Description

This Creamy Chicken & Mushroom Pasta is a rich and satisfying dish perfect for cozy dinners. Tender chicken and sautéed mushrooms are tossed in a velvety Parmesan cream sauce and served over spaghetti or linguine. A quick, flavorful meal that’s always a crowd-pleaser.


Ingredients

  • 2 chicken breasts, cubed

  • 1 cup sliced mushrooms

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 cup heavy cream

  • 1/2 cup chicken broth

  • 1/2 cup grated Parmesan cheese

  • 8 oz spaghetti or linguine

  • Salt and pepper, to taste

  • Fresh thyme, for seasoning and garnish


Instructions

  • Cook the Chicken:
    Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat. Add chicken and cook for 7–8 minutes until browned and cooked through. Remove and set aside.

  • Sauté Mushrooms & Garlic:
    In the same skillet, sauté garlic and mushrooms for 4–5 minutes until softened.

  • Build the Sauce:
    Add chicken broth and simmer for 2 minutes. Pour in heavy cream and bring to a gentle boil. Stir in Parmesan cheese and cook until the sauce thickens.

  • Cook Pasta:
    Meanwhile, cook pasta according to package directions. Drain and set aside.

  • Combine:
    Return cooked chicken and pasta to the skillet. Stir well to coat with the creamy mushroom sauce.

  • Season & Serve:
    Sprinkle with fresh thyme, adjust salt and pepper to taste, and serve hot.

Notes

  • Add spinach or peas for extra vegetables.

  • Swap chicken for shrimp or tofu for variation.

  • Use fettuccine or penne instead of spaghetti if preferred.
