Ingredients

2 chicken breasts, cubed

1 cup sliced mushrooms

2 tablespoons olive oil

2 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

8 oz spaghetti or linguine

Salt and pepper, to taste

Fresh thyme, for seasoning and garnish
Instructions

Cook the Chicken:
Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat. Add chicken and cook for 7–8 minutes until browned and cooked through. Remove and set aside. -
Sauté Mushrooms & Garlic:
In the same skillet, sauté garlic and mushrooms for 4–5 minutes until softened. -
Build the Sauce:
Add chicken broth and simmer for 2 minutes. Pour in heavy cream and bring to a gentle boil. Stir in Parmesan cheese and cook until the sauce thickens. -
Cook Pasta:
Meanwhile, cook pasta according to package directions. Drain and set aside. -
Combine:
Return cooked chicken and pasta to the skillet. Stir well to coat with the creamy mushroom sauce. -
Season & Serve:
Sprinkle with fresh thyme, adjust salt and pepper to taste, and serve hot.
