Silky smooth, rich, and crowned with golden caramel, this Classic Brazilian Pudim is a beloved dessert made with just a few simple ingredients. It’s the perfect balance of creamy custard and sweet, glossy syrup — and it melts in your mouth with every bite.

Why You’ll Love This Recipe:

  • Made with just 3 base ingredients plus optional vanilla

  • Traditional Brazilian comfort dessert

  • Easy to make ahead and serve chilled

  • Stunning presentation straight from the mold

Ingredients

For the Caramel:

  • 1 cup (200 g) granulated sugar

  • ½ cup (120 ml) water

For the Custard:

  • 1 can (395 g) sweetened condensed milk

  • 2 cups (480 ml) whole milk

  • 3 large eggs

  • 1 tsp vanilla extract (optional)

‍ Instructions

Prepare the Caramel:

  1. In a medium saucepan, combine sugar and water over medium heat.

  2. Let it simmer without stirring for about 8–10 minutes, until it turns golden amber.

  3. Immediately pour the caramel into a bundt pan or pudding mold, swirling to coat the bottom evenly.
⚠️ Caution: Caramel is extremely hot. Handle with care.

  4. Set aside to cool and slightly harden.

Prepare the Custard:

  1. In a blender, combine sweetened condensed milk, whole milk, eggs, and vanilla (if using).

  2. Blend until smooth and well mixed — about 1 minute.

  3. Pour the custard into the cooled, caramel-lined mold.

Bake the Pudim:

  1. Preheat your oven to 180°C (350°F).

  2. Place the mold inside a larger roasting pan.

  3. Carefully pour hot water into the larger pan until it comes halfway up the sides of the mold — this is your banho-maria (water bath).

  4. Bake for about 1 hour, or until the custard is set but slightly jiggly in the center.

  5. Remove from the oven and cool completely at room temperature.

Chill & Unmold:

  1. Refrigerate the pudim for at least 4 hours, preferably overnight.

  2. To unmold, run a thin knife around the edges, then invert onto a serving plate.

  3. Spoon any remaining caramel over the top.

Tips & Variations

  • For a deeper flavor, add a splash of dark rum or orange zest to the custard.

  • Use a fine mesh strainer when pouring the custard for a super smooth texture.
