Ingredients
-
2 boneless, skinless chicken breasts, cut into bite-sized pieces
-
8 oz pasta (penne or rotini works well)
-
4 slices of bacon, chopped
-
1 tablespoon olive oil
-
2 tablespoons Cajun seasoning
-
2 tablespoons honey
-
1/4 cup BBQ sauce
-
1 cup heavy cream
-
1/2 cup chicken broth
-
1/2 cup grated Parmesan cheese
-
1 teaspoon garlic powder
-
Salt and pepper, to taste
-
Fresh parsley, chopped (for garnish)
Instructions
-
Cook pasta according to package directions. Drain and set aside.
-
In a large skillet, heat olive oil over medium-high heat. Add chopped bacon and cook until crispy (about 5-7 minutes). Remove bacon and set aside, leaving some bacon grease in the pan.
-
Add chicken to the skillet; season with Cajun seasoning, garlic powder, salt, and pepper. Cook for 6-8 minutes until browned and cooked through. Remove and set aside with bacon.
-
In the same skillet, whisk together BBQ sauce, honey, chicken broth, and heavy cream. Bring to a simmer and cook for 3-4 minutes until slightly thickened.
-
Stir in Parmesan cheese; cook another 2 minutes until sauce is creamy and smooth.
-
Add cooked pasta, chicken, and bacon back into skillet. Toss to coat in the sauce.
-
Garnish with fresh parsley and serve immediately.
Notes
Adjust Cajun seasoning to taste if you prefer less heat.
✅ Swap Parmesan for another hard cheese like Pecorino Romano for variation.
✅ Use rotisserie chicken for an even quicker meal prep.
