For the Vegetables
- 1 medium zucchini (200 g / 7 oz), thinly sliced
- 1 medium eggplant (250 g / 9 oz), thinly sliced
- 1 red bell pepper, diced (150 g / 5 oz)
- 1 yellow bell pepper, diced (150 g / 5 oz)
- 1 tbsp (15 ml) olive oil
- 1/2 tsp (1 g) salt
- 1/4 tsp (0.5 g) black pepper
For the Cheese Drizzle
- 200 g (7 oz) cream cheese, softened
- 1/4 cup (60 ml) milk
- 2 tbsp (30 ml) olive oil
- 2 cloves garlic, minced
- 1 tbsp (15 ml) lemon juice
- 2 tsp (5 g) fresh parsley, finely chopped
- 1 tsp (2 g) fresh thyme, finely chopped
- Salt and black pepper, to taste
For the Lasagna Layers
- 6–8 sheets oven-ready lasagna noodles
- 100 g (3.5 oz) feta cheese, crumbled
- 50 g (1/2 cup) grated Parmesan cheese
Instructions
- Preheat oven to 190°C (375°F). Toss zucchini, eggplant, and bell peppers with olive oil, salt, and black pepper. Roast on a baking sheet for 15–20 minutes until lightly golden and tender. Set aside.
- In a blender or food processor, combine cream cheese, milk, olive oil, garlic, lemon juice, parsley, thyme, salt, and pepper. Blend until smooth to make the creamy garlic herb drizzle.
- In a 9×13-inch (23×33 cm) baking dish, start layering:
- Spread a thin layer of the garlic herb cheese on the bottom.
- Add a layer of lasagna noodles.
- Add a layer of roasted vegetables.
- Sprinkle a little feta cheese.
- Repeat layers, finishing with noodles and a generous drizzle of the garlic herb cheese on top.
- Sprinkle grated Parmesan over the top layer.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10–15 minutes until golden and bubbly.
- Allow lasagna to rest for 5–10 minutes before slicing. Serve warm.
