For the Vegetables

  • 1 medium zucchini (200 g / 7 oz), thinly sliced
  • 1 medium eggplant (250 g / 9 oz), thinly sliced
  • 1 red bell pepper, diced (150 g / 5 oz)
  • 1 yellow bell pepper, diced (150 g / 5 oz)
  • 1 tbsp (15 ml) olive oil
  • 1/2 tsp (1 g) salt
  • 1/4 tsp (0.5 g) black pepper

For the Cheese Drizzle

  • 200 g (7 oz) cream cheese, softened
  • 1/4 cup (60 ml) milk
  • 2 tbsp (30 ml) olive oil
  • 2 cloves garlic, minced
  • 1 tbsp (15 ml) lemon juice
  • 2 tsp (5 g) fresh parsley, finely chopped
  • 1 tsp (2 g) fresh thyme, finely chopped
  • Salt and black pepper, to taste

For the Lasagna Layers

  • 68 sheets oven-ready lasagna noodles
  • 100 g (3.5 oz) feta cheese, crumbled
  • 50 g (1/2 cup) grated Parmesan cheese

Instructions

  1. Preheat oven to 190°C (375°F). Toss zucchini, eggplant, and bell peppers with olive oil, salt, and black pepper. Roast on a baking sheet for 15–20 minutes until lightly golden and tender. Set aside.
  2. In a blender or food processor, combine cream cheese, milk, olive oil, garlic, lemon juice, parsley, thyme, salt, and pepper. Blend until smooth to make the creamy garlic herb drizzle.
  3. In a 9×13-inch (23×33 cm) baking dish, start layering:
    • Spread a thin layer of the garlic herb cheese on the bottom.
    • Add a layer of lasagna noodles.
    • Add a layer of roasted vegetables.
    • Sprinkle a little feta cheese.
    • Repeat layers, finishing with noodles and a generous drizzle of the garlic herb cheese on top.
    • Sprinkle grated Parmesan over the top layer.
  4. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10–15 minutes until golden and bubbly.
  5. Allow lasagna to rest for 5–10 minutes before slicing. Serve warm.
