For the Flatbread:
- 1 store-bought or homemade flatbread (10–12 inches)
- 1 tbsp olive oil
For the Fruit & Cheese:
- 1 small pear, thinly sliced
- 1 small apple, thinly sliced
- 4 oz (115 g) brie cheese, sliced
- 1/4 cup crumbled feta cheese
For the Topping:
- 2 tbsp cranberry jelly
- 1 tbsp chopped fresh rosemary or thyme
- 1 tbsp toasted walnuts or pecans (optional)
- Fresh arugula for garnish (optional)
Instructions
- Preheat Oven: Preheat oven to 400°F (200°C).
- Prepare Flatbread: Place flatbread on a baking sheet and brush lightly with olive oil.
- Assemble Flatbread: Arrange pear and apple slices evenly over flatbread. Layer with brie slices. Drizzle with small dollops of cranberry jelly. Sprinkle feta, rosemary (or thyme), and toasted nuts if using.
- Bake: Bake 10–12 minutes, until the brie melts and edges of flatbread are golden.
- Garnish & Serve: Remove from oven, top with fresh arugula if desired, slice, and serve warm.
