Ingredients

Units Scale

Dry Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon powder
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Wet Ingredients:

  • 1/2 cup (120ml) vegetable oil or melted butter
  • 3/4 cup (150g) brown sugar
  • 2 large eggs
  • 1/2 cup (120ml) milk or buttermilk
  • 1 tsp vanilla extract

Mix-ins:

  • 1 1/2 cups (180g) peeled and finely chopped apples (about 2 medium apples)
  • 3/4 cup (80g) chopped walnuts
  • 2 tbsp honey or maple syrup (optional, for extra moisture)

Instructions

  1. Preheat Oven: Preheat your oven to 170°C (340°F). Grease and line a loaf pan with parchment paper.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. Mix Wet Ingredients: In another bowl, whisk oil, brown sugar, and eggs until smooth. Add milk, vanilla extract, and honey if using. Mix until well combined.
  4. Combine Mixtures: Gently fold the dry ingredients into the wet mixture until just combined. Add the chopped apples and walnuts, and stir until evenly distributed — do not overmix.
  5. Bake: Pour the batter into the prepared loaf pan and smooth the top. Sprinkle a few chopped walnuts on top for crunch. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • You can drizzle some caramel sauce over the cake for added sweetness.
  • This cake is best served warm with a scoop of vanilla ice cream.
