Flatbreads:

  • 2 flatbreads (store-bought or homemade)
  • 1 tbsp olive oil

Toppings:

  • 5 oz Brie cheese, sliced
  • 1/3 cup dried cranberries
  • 1/4 cup walnuts, roughly chopped

Chili Honey Drizzle:

  • 2 tbsp honey
  • 1/2 tsp red chili flakes (adjust to taste)
  • Fresh thyme leaves, for garnish
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat oven: Preheat oven to 400°F (200°C).
  2. Toast walnuts: Spread walnuts on a baking sheet and toast for 5–7 minutes until fragrant. Remove and set aside.
  3. Crisp flatbreads: Brush flatbreads lightly with olive oil and bake for 4–5 minutes until just beginning to crisp.
  4. Add Brie: Top flatbreads evenly with sliced Brie and return to the oven for 5–7 minutes, until cheese is soft and melty.
  5. Top & finish: Sprinkle cranberries and toasted walnuts over melted Brie.
  6. Make chili honey drizzle: Warm honey gently in a small saucepan and stir in chili flakes. Drizzle generously over flatbreads.
  7. Garnish & serve: Finish with fresh thyme and a light sprinkle of flaky sea salt. Slice and serve immediately.
