Description

These Avocado Egg Bread Cups are a creative and wholesome breakfast! Creamy avocado and fresh eggs are baked inside crusty bread rings — nutritious and perfect for brunch or meal prep.


Ingredients

  • 3 small bread rolls or crusty baguette slices

  • 1 ripe avocado

  • 3 eggs

  • Salt and pepper

  • Diced ham or bacon (optional)

 

  • Green onions for garnish


Instructions

  • Cut a hole in the center of each bread piece to form a cup.

  • Slice avocado and line each cup with slices.

  • Crack an egg into each.

  • Top with diced ham and season.

 

  • Bake at 375°F (190°C) for 12–15 minutes or until egg whites are set.

Notes

  • Add cheese for extra richness.
