Description

Start your day with a nutritious and delicious Avocado Toast with Poached Egg – a protein-packed breakfast that combines creamy avocado and perfectly poached eggs over crispy toast. A wholesome, easy-to-make meal that’s as beautiful as it is tasty!


Ingredients

  • 2 slices of whole grain or sourdough bread, toasted

  • 1 ripe avocado

  • 2 large eggs

  • 1 tbsp white vinegar (for poaching)

  • Salt and pepper to taste

  • Fresh lemon wedges (optional)

  • Chopped parsley or chives for garnish


Instructions

  1. Prepare the avocado: Halve the avocado, remove the pit, and scoop the flesh into a bowl. Mash with a fork and season with salt and pepper.

  2. Toast the bread: Toast your bread slices until golden and crispy.

  3. Poach the eggs: Bring a pot of water to a gentle simmer, add vinegar, and stir to create a whirlpool. Crack each egg into a small bowl and gently drop it into the center. Cook for 3–4 minutes, then remove with a slotted spoon.

  4. Assemble: Spread mashed avocado evenly on the toast. Place a poached egg on each slice.

  5. Season & garnish: Sprinkle with salt, pepper, and herbs. Serve with lemon wedges on the side.

Notes

  • Add chili flakes or a drizzle of olive oil for extra flavor.
