For the Ground Lamb Filling

For the Spicy Lemon Honey Feta Cream
- 1 cup feta cheese, crumbled
- 1/3 cup Greek yogurt
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1/2 teaspoon chili flakes
- 1 small garlic clove
- 2–3 tablespoons water (to thin if needed)
For the Wrap
- 4 large flatbreads or pita wraps
- 1 cup shredded romaine lettuce
- 1/2 cup diced cucumbers
- 1/2 cup cherry tomatoes, halved
- 1/4 cup thinly sliced red onion
- 1/4 cup chopped fresh parsley
- Optional: pickled peppers or olives for extra tang
Instructions
- Cook the Lamb – Heat olive oil in a skillet over medium heat. Add garlic and sauté 30 seconds until fragrant. Add ground lamb, breaking it apart, and cook 7–10 minutes until browned.
- Season the Lamb – Mix in paprika, cumin, oregano, cinnamon, salt, pepper, and chili flakes. Cook for an additional 2–3 minutes. Finish with lemon juice and stir well.
- Prepare the Feta Cream – In a blender or food processor, combine feta, Greek yogurt, honey, olive oil, lemon zest, lemon juice, chili flakes, and garlic. Blend until smooth and creamy. Add water gradually to achieve a spreadable consistency.
- Warm the Wraps – Heat flatbreads lightly in a dry skillet or microwave for 20 seconds to make them pliable.
- Assemble the Wraps – Spread a generous layer of spicy lemon honey feta cream on each wrap. Add cooked lamb, lettuce, cucumbers, tomatoes, red onion, and parsley. Optionally, add pickled peppers or olives for extra flavor.
- Serve – Fold the sides of the wrap, roll tightly, slice in half, and serve immediately.
