Balsamic Chicken

  • 1 1/2 lb (700 g) boneless skinless chicken breasts or thighs
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and black pepper, to taste

Roasted Vegetables

  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 small red onion, sliced
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste

Orzo

  • 1 1/2 cups orzo pasta
  • 3 cups chicken broth or water
  • Salt, to taste

Dill Feta

  • 3/4 cup crumbled feta cheese
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp olive oil
  • Fresh black pepper, to taste

Instructions

  1. Marinate the Chicken – In a bowl, whisk balsamic vinegar, olive oil, garlic, oregano, salt, and pepper. Add chicken and coat well. Marinate for at least 20 minutes.
  2. Roast the Vegetables – Preheat oven to 425°F (220°C). Toss zucchini, bell pepper, red onion, and cherry tomatoes with olive oil, smoked paprika, salt, and pepper. Roast for 25–30 minutes until tender and lightly caramelized.
  3. Cook the Orzo – Bring chicken broth to a boil. Add orzo and cook according to package instructions until al dente. Drain if needed and set aside.
  4. Cook the Chicken – Heat a skillet over medium-high heat. Sear chicken 5–6 minutes per side until cooked through and glazed. Rest briefly, then slice.
  5. Prepare the Dill Feta – In a small bowl, mix feta with fresh dill, olive oil, and black pepper.
  6. Assemble the Dish – Toss cooked orzo with roasted vegetables. Top with sliced balsamic chicken and sprinkle generously with dill feta.
  7. Serve – Garnish with extra herbs and serve warm.
