Balsamic Chicken

- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano

Roasted Vegetables
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 small red onion, sliced
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
Orzo
- 1 1/2 cups orzo pasta
- 3 cups chicken broth or water
- Salt, to taste
Dill Feta
- 3/4 cup crumbled feta cheese
- 2 tbsp fresh dill, finely chopped
- 1 tbsp olive oil
- Fresh black pepper, to taste
Instructions
- Marinate the Chicken – In a bowl, whisk balsamic vinegar, olive oil, garlic, oregano, salt, and pepper. Add chicken and coat well. Marinate for at least 20 minutes.
- Roast the Vegetables – Preheat oven to 425°F (220°C). Toss zucchini, bell pepper, red onion, and cherry tomatoes with olive oil, smoked paprika, salt, and pepper. Roast for 25–30 minutes until tender and lightly caramelized.
- Cook the Orzo – Bring chicken broth to a boil. Add orzo and cook according to package instructions until al dente. Drain if needed and set aside.
- Cook the Chicken – Heat a skillet over medium-high heat. Sear chicken 5–6 minutes per side until cooked through and glazed. Rest briefly, then slice.
- Prepare the Dill Feta – In a small bowl, mix feta with fresh dill, olive oil, and black pepper.
- Assemble the Dish – Toss cooked orzo with roasted vegetables. Top with sliced balsamic chicken and sprinkle generously with dill feta.
- Serve – Garnish with extra herbs and serve warm.
