For the Roasted Veggies

  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 small red onion, diced
  • 1 tbsp olive oil
  • Salt and black pepper, to taste

For the Orzo

  • 1 1/2 cups orzo pasta
  • 3 cups chicken broth
  • 1 tbsp olive oil

For the Honey Feta Dressing

  • 100 g feta cheese, crumbled
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Black pepper, to taste

For Garnish

  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 200°C. Toss diced vegetables with olive oil, salt, and pepper. Roast for 20–25 minutes until tender and caramelized.
  2. In a skillet, heat olive oil. Season chicken with garlic powder, smoked paprika, salt, and pepper. Cook chicken until golden and cooked through. Set aside.
  3. In the same skillet, toast orzo for 1 minute, then add chicken broth. Simmer for 10–12 minutes until orzo is tender and creamy.
  4. In a small bowl, whisk together crumbled feta, honey, olive oil, lemon juice, and black pepper until smooth.
  5. Combine cooked chicken, roasted veggies, and orzo in a serving bowl. Drizzle with honey feta dressing and toss gently.
  6. Garnish with fresh parsley and serve warm.
