  • 1/3 cup walnuts, roughly chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare Brussels sprouts: Place the halved Brussels sprouts on a baking sheet. Drizzle with olive oil and season with salt and black pepper. Toss to coat evenly.
  3. Roast: Roast for 20–25 minutes until the Brussels sprouts are tender and slightly crispy on the edges.
  4. Make the glaze: While the Brussels sprouts roast, whisk together balsamic vinegar, honey, Dijon mustard, and minced garlic in a small bowl.
  5. Combine: Remove the Brussels sprouts from the oven and transfer them to a serving bowl. Add dried cranberries and chopped walnuts. Drizzle the balsamic glaze over the top and toss gently to combine.
