Soft and chewy blueberry oatmeal cookies made with wholesome oats and fresh blueberries. A perfect healthy snack or breakfast treat!

- 1 cup rolled oats
- 3/4 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup fresh or dried blueberrie
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
- In another bowl, cream butter and sugar until smooth. Add egg and vanilla.
- Gradually mix in the dry ingredients, then fold in blueberries.
- Scoop dough onto the baking sheet and flatten slightly.
- Bake for 12-15 minutes or until golden brown.
- Cool before serving.
Notes
- Use frozen blueberries if fresh ones aren’t available.
- Substitute brown sugar with honey for a healthier version.
