Description

Soft and chewy blueberry oatmeal cookies made with wholesome oats and fresh blueberries. A perfect healthy snack or breakfast treat!


Ingredients

  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup fresh or dried blueberrie

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  • In another bowl, cream butter and sugar until smooth. Add egg and vanilla.
  • Gradually mix in the dry ingredients, then fold in blueberries.
  • Scoop dough onto the baking sheet and flatten slightly.
  • Bake for 12-15 minutes or until golden brown.
  • Cool before serving.

Notes

  • Use frozen blueberries if fresh ones aren’t available.
  • Substitute brown sugar with honey for a healthier version.
