Ingredients

For the Filling:

  • 2 tablespoons olive oil

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 2 cooked chicken breasts, shredded

  • 1 tomato, chopped (optional)

  • 1/2 cup corn

  • 1/2 cup peas

  • Salt and pepper to taste

  • 1/2 cup cream cheese or requeijão (optional)

  • 2 tablespoons chopped parsley

For the Batter:

  • 3 eggs

  • 1 cup milk

  • 1/2 cup vegetable oil

  • 1 1/2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 2 tablespoons grated Parmesan cheese (optional)


Instructions

Prepare the Filling:

  1. Heat olive oil in a pan over medium heat. Sauté the onion and garlic until softened.

  2. Add shredded chicken, tomato (if using), corn, peas, salt, and pepper. Cook for a few minutes.

  3. Stir in the cream cheese or requeijão for a creamy texture. Mix in chopped parsley and set aside to cool.

Make the Batter:
4. Preheat your oven to 350°F (180°C). Grease a baking dish (8×8 inches or similar).
5. In a blender, combine eggs, milk, and oil. Blend until smooth.
6. Add flour, baking powder, salt, and Parmesan (if using). Blend until well mixed.

Assemble and Bake:
7. Pour half the batter into the prepared baking dish.
8. Evenly spread the chicken filling over the batter.
9. Top with the remaining batter and spread gently.
10. Bake for 30–40 minutes or until golden and a toothpick comes out clean.
11. Let cool slightly before slicing and serving.
