Honey Lime Chicken:

  • 1 1/2 lb (700 g) boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 3 tbsp honey
  • Zest and juice of 1 lime
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste

Quinoa Stack:

  • 1 cup quinoa, rinsed
  • 2 cups water or chicken broth
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 2 green onions, sliced
  • 1 tbsp fresh cilantro, chopped

Hot Honey Drizzle:

  • 3 tbsp honey
  • 1/2 tsp crushed red pepper flakes
  • 1 tsp lime juice

Instructions

  1. Cook the Quinoa: Bring water or broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes until liquid is absorbed. Fluff with a fork and set aside.
  2. Marinate the Chicken: In a bowl, mix olive oil, honey, lime zest and juice, garlic, smoked paprika, salt, and pepper. Coat chicken and let marinate for 15–20 minutes.
  3. Cook the Chicken: Heat a skillet over medium-high heat. Cook chicken for 5–7 minutes per side until golden and cooked through. Let rest briefly, then slice.
  4. Prepare the Hot Honey Drizzle: In a small saucepan, warm honey with crushed red pepper flakes and lime juice until combined. Remove from heat.
  5. Assemble the Quinoa Stack: Using a ring mold or spoon, layer quinoa, diced avocado, cherry tomatoes, and green onions. Top with sliced chicken.
  6. Serve: Drizzle hot honey over the chicken stack. Garnish with fresh cilantro and lime wedges. Serve immediately.
