For the Shrimp:
- 1 lb large shrimp, peeled and deveined

For the Tortellini and Sauce:
- 20 oz refrigerated cheese tortellini
- 5 tbsp unsalted butter
- 6 cloves garlic, minced
- 1 1/2 cups heavy cream
- 6 oz cream cheese, softened
- 8 oz Velveeta, cubed
- 1 cup shredded mozzarella
- 3/4 cup grated Parmesan
- 1/2 cup shredded provolone
- 1/2 cup roasted red peppers, sliced
- 2 tbsp green onions, sliced
Instructions
- Cook the Tortellini: Cook tortellini in salted water according to package directions. Reserve 1 cup pasta water and drain.
- Season and Cook the Shrimp: Season shrimp with Cajun seasoning, smoked paprika, garlic powder, and salt. Sear shrimp in olive oil and butter until golden and pink. Set aside.
- Prepare the Sauce: In the same pan, sauté garlic in butter. Add heavy cream, Velveeta, and cream cheese. Stir until smooth and thick.
- Add Cheeses: Incorporate mozzarella, Parmesan, and provolone into the sauce until melted and creamy.
- Finish the Dish: Mix in roasted red peppers and tortellini. Toss until well-coated. Place shrimp on top and garnish with green onions.
