  • 8 oz Velveeta, cubed
  • 1 cup shredded mozzarella
  • 3/4 cup grated Parmesan
  • 1/2 cup shredded provolone
  • 1/2 cup roasted red peppers, sliced
  • 2 tbsp green onions, sliced

Instructions

  1. Cook the Tortellini: Cook tortellini in salted water according to package directions. Reserve 1 cup pasta water and drain.
  2. Season and Cook the Shrimp: Season shrimp with Cajun seasoning, smoked paprika, garlic powder, and salt. Sear shrimp in olive oil and butter until golden and pink. Set aside.
  3. Prepare the Sauce: In the same pan, sauté garlic in butter. Add heavy cream, Velveeta, and cream cheese. Stir until smooth and thick.
  4. Add Cheeses: Incorporate mozzarella, Parmesan, and provolone into the sauce until melted and creamy.
  5. Finish the Dish: Mix in roasted red peppers and tortellini. Toss until well-coated. Place shrimp on top and garnish with green onions.
