Description

Moist, spiced carrot cake in an easy-to-eat bar form with cream cheese frosting.


Ingredients

  • 1 cup grated carrots
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  • Preheat oven to 350°F (175°C).
  • Mix flour, cinnamon, baking powder, baking soda, and salt.
  • In another bowl, whisk sugar, oil, and egg. Combine with dry ingredients and carrots.
  • Bake for 20-25 minutes. Cool before frosting.
  • Mix frosting ingredients and spread over bars.
