- 1 cup grated carrots
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1 egg
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F (175°C).
- Mix flour, cinnamon, baking powder, baking soda, and salt.
- In another bowl, whisk sugar, oil, and egg. Combine with dry ingredients and carrots.
- Bake for 20-25 minutes. Cool before frosting.
- Mix frosting ingredients and spread over bars.

- Add nuts or raisins for extra texture.
- Store in the fridge for up to 3 days.
