- 1 lb ground beef
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes, drained
- 1 small onion, diced
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 1 can (10 oz) cream of mushroom soup
- 1 cup biscuit mix
- 1/2 cup milk
- 1 egg
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef and onion until browned. Drain excess fat.
- Stir in corn, tomatoes, garlic powder, paprika, salt, and pepper. Simmer for 5 minutes.
- Transfer mixture to a greased baking dish and spread evenly.
- In a bowl, mix biscuit mix, milk, and egg. Pour over beef mixture.
- Sprinkle shredded cheese on top.
- Bake for 30 minutes or until golden brown and bubbly.
- Let cool for 5 minutes before serving.
Notes
- You can substitute ground turkey for beef for a leaner option.
- Add jalapeños for extra spice.
