Description

This Cheesy Beef and Corn Casserole is a comforting and hearty dish loaded with seasoned ground beef, sweet corn, and gooey melted cheese. A perfect easy weeknight dinner!


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 small onion, diced
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 can (10 oz) cream of mushroom soup
  • 1 cup biscuit mix
  • 1/2 cup milk

 

  • 1 egg

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef and onion until browned. Drain excess fat.
  • Stir in corn, tomatoes, garlic powder, paprika, salt, and pepper. Simmer for 5 minutes.
  • Transfer mixture to a greased baking dish and spread evenly.
  • In a bowl, mix biscuit mix, milk, and egg. Pour over beef mixture.
  • Sprinkle shredded cheese on top.
  • Bake for 30 minutes or until golden brown and bubbly.

 

  • Let cool for 5 minutes before serving.

Notes

  • You can substitute ground turkey for beef for a leaner option.
  • Add jalapeños for extra spice.
