Description

Cheesy Broccoli Stuffed Chicken is a delicious and flavorful dish where juicy chicken breasts are filled with a creamy mixture of broccoli and cheese, then baked to perfection.

For the Chicken:

  • 2 large boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & black pepper, to taste

For the Filling:

  • 1 cup finely chopped broccoli (lightly steamed and drained well)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 1 garlic clove, minced
  • 2 tbsp grated Parmesan cheese
  • Salt & black pepper, to taste

Instructions

  1. Preheat oven: Set oven to 375°F (190°C). Lightly grease a baking dish.
  2. Prepare chicken: Slice a pocket horizontally into each chicken breast, being careful not to cut all the way through.
  3. Make filling: In a bowl, combine steamed broccoli, mozzarella, cream cheese, garlic, Parmesan, salt, and pepper. Mix until well combined.
  4. Stuff chicken: Spoon the broccoli-cheese mixture evenly into each chicken breast pocket. Secure with toothpicks if needed.
  5. Season outside: Rub olive oil over the chicken and season with paprika, garlic powder, onion powder, salt, and pepper.
  6. Bake: Place stuffed chicken in the baking dish and bake for 25–30 minutes, or until internal temperature reaches 165°F (74°C).
  7. Optional broil: Broil for 2–3 minutes at the end for a golden top. Let rest 5 minutes before serving.
