For the Chicken:
- 2 large boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt & black pepper, to taste
For the Filling:
- 1 cup finely chopped broccoli (lightly steamed and drained well)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup cream cheese, softened
- 1 garlic clove, minced
- 2 tbsp grated Parmesan cheese
- Salt & black pepper, to taste
Instructions
- Preheat oven: Set oven to 375°F (190°C). Lightly grease a baking dish.
- Prepare chicken: Slice a pocket horizontally into each chicken breast, being careful not to cut all the way through.
- Make filling: In a bowl, combine steamed broccoli, mozzarella, cream cheese, garlic, Parmesan, salt, and pepper. Mix until well combined.
- Stuff chicken: Spoon the broccoli-cheese mixture evenly into each chicken breast pocket. Secure with toothpicks if needed.
- Season outside: Rub olive oil over the chicken and season with paprika, garlic powder, onion powder, salt, and pepper.
- Bake: Place stuffed chicken in the baking dish and bake for 25–30 minutes, or until internal temperature reaches 165°F (74°C).
- Optional broil: Broil for 2–3 minutes at the end for a golden top. Let rest 5 minutes before serving.
