These Cheesy Mashed Potato Puffs are crispy on the outside and fluffy on the inside, bursting with cheesy goodness. A perfect way to use leftover mashed potatoes, they make a tasty snack, appetizer, or side dish for any meal.
Ingredients

2 cups mashed potatoes (leftover or freshly made)

1 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 large eggs

1/4 cup milk

2 green onions, chopped

Salt and pepper to taste
Instructions

Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.

In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, and green onions. Season with salt and pepper to taste.

Mix well until all ingredients are thoroughly combined.

Spoon the mixture into the muffin tin, filling each cup almost to the top.

Bake for 20–25 minutes or until golden brown and crispy on the edges.

Allow to cool slightly before removing from the tin. Serve warm.
