Description

These Cheesy Mashed Potato Puffs are crispy on the outside and fluffy on the inside, bursting with cheesy goodness. A perfect way to use leftover mashed potatoes, they make a tasty snack, appetizer, or side dish for any meal.


Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)

  • 1 cup shredded cheddar cheese

  • 1/4 cup grated Parmesan cheese

  • 2 large eggs

  • 1/4 cup milk

  • 2 green onions, chopped

  • Salt and pepper to taste


Instructions

  • Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.

  • In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, and green onions. Season with salt and pepper to taste.

  • Mix well until all ingredients are thoroughly combined.

  • Spoon the mixture into the muffin tin, filling each cup almost to the top.

  • Bake for 20–25 minutes or until golden brown and crispy on the edges.

  • Allow to cool slightly before removing from the tin. Serve warm.

Notes

  • For added texture, mix in cooked bacon bits or herbs.

  • Can be made ahead and reheated in the oven or air fryer.
