Ingredients

If you love cheesy, bite-sized comfort food, these Cheesy Stuffed Meatloaf Bites will be your new obsession. Juicy ground beef seasoned just right, wrapped around gooey cheddar, and glazed with tangy ketchup-mustard sauce — baked to perfection. Perfect for dinners, parties, or meal prep!

Instructions

  • 1 pound ground beef

  • ½ cup breadcrumbs

  • ¼ cup milk

  • 1 large egg

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon Worcestershire sauce

  • ½ cup ketchup

  • 1 tablespoon yellow mustard

  • ½ cup shredded cheddar cheese

  • ¼ cup fresh parsley, chopped (plus more for garnish)

Notes

1️⃣ Preheat & Prep

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

2️⃣ Make the Meatloaf Mixture

In a large bowl, combine:

  • Ground beef

  • Breadcrumbs

  • Milk

  • Egg

  • Chopped onion

  • Minced garlic

  • Salt, pepper, and Worcestershire sauce
Mix until well blended but not overworked.

3️⃣ Stuff & Shape

Scoop a small portion of the meat mixture and flatten it in your palm.
Place about 1 tsp of shredded cheddar cheese in the center.
Wrap the meat around the cheese to form a sealed ball.
Repeat and place all bites onto the prepared baking sheet.

4️⃣ Glaze the Tops

In a small bowl, stir together the ketchup and mustard.
Brush the glaze generously over each meatloaf bite.

5️⃣ Bake

Bake for 25–30 minutes, or until the bites are fully cooked and tops are lightly caramelized.

6️⃣ Garnish & Serve

Sprinkle with fresh parsley and serve hot. Great with mashed potatoes, dipping sauce, or a side salad!
