1 lb ground beef

1/2 cup breadcrumbs

1/4 cup milk

1 large egg

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp Worcestershire sauce

1/2 cup ketchup

1 tbsp mustard

1/2 cup grated cheddar cheese

1/4 cup fresh parsley, chopped (plus extra for garnish)
Instructions

Preheat Oven: Preheat oven to 375°F (190°C). Grease a mini muffin tin or line with paper liners.

Make Meat Mixture: In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, and Worcestershire sauce until well combined.

Form Bites: Flatten a spoonful of meat mixture in your hand. Add some grated cheddar to the center and form into a ball around it. Place in muffin tin. Repeat until all meat is used.

Top It Off: Mix ketchup and mustard in a small bowl. Spoon a bit over each meatloaf bite.

Bake: Bake for 20–25 minutes until cooked through and tops are lightly caramelized.
