- 2 cups cooked chicken breast, shredded
- 1 cup cucumber, diced (seeds removed if watery)
For the Dressing:
- 1/4 cup mayonnaise
- 2 tbsp plain Greek yogurt (or extra mayo)
- 1 tbsp fresh lemon juice
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh dill (optional but delicious)
- 1/4 tsp garlic powder
- Salt & black pepper to taste
- 4 sandwich buns or croissants
Instructions
- In a large bowl, combine shredded chicken and diced cucumber. Mix well.
- In a small bowl, mix mayonnaise, Greek yogurt, lemon juice, parsley, dill, garlic powder, salt, and pepper. Stir until well combined.
- Pour the dressing over the chicken mixture and gently stir until evenly coated.
- Chill for 20–30 minutes for best flavor (optional but recommended).
- Spoon generously onto buns or croissants. Serve immediately.
