Chicken Cutlets:

  • 4 boneless, skinless chicken breasts, pounded thin
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 3 tablespoons olive oil (for frying)

Hot Honey Lemon Feta Drizzle:

  • 1/4 cup crumbled feta cheese
  • 2 tablespoons honey
  • Zest and juice of 1 lemon
  • 1/2 teaspoon hot sauce (optional)

Instructions

  1. Preheat oven to 400°F (200°C) if finishing cutlets in oven. Set up a breading station: flour in one bowl, beaten eggs in another, and panko, Parmesan, thyme, oregano, paprika, salt, and pepper in a third.
  2. Dredge each chicken cutlet in flour, dip in egg, then coat with the Parmesan herb breadcrumb mixture.
  3. Heat olive oil in a large skillet over medium heat. Fry chicken 3–4 minutes per side until golden brown. Optionally transfer to the oven for 5–7 minutes to ensure cooked through.
  4. In a small bowl, mix feta, honey, lemon juice, lemon zest, and hot sauce to make the drizzle.
  5. Drizzle hot honey lemon feta over the crispy chicken cutlets before serving.
  6. Serve immediately with a side salad or roasted vegetables.
