Description

Ingredients

  • 2-4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 1 teaspoon Italian seasoning

  • 2 cloves garlic, minced

  • Salt and black pepper to taste

  • 2-3 ripe tomatoes, sliced

  • 1 cup shredded mozzarella cheese (or sliced fresh mozzarella)

  • Fresh basil or parsley for garnish (optional)


Instructions

Step 1: Prep the Chicken

  1. Preheat oven to 400°F (200°C).

  2. Season chicken with salt, pepper, garlic, and Italian seasoning.

  3. Heat olive oil in a skillet and sear the chicken for 2–3 minutes per side until lightly browned.

Step 2: Assemble the Dish

  1. Transfer seared chicken to a baking dish.

  2. Top each piece with sliced tomatoes.

  3. Sprinkle or lay mozzarella over the top.

Step 3: Bake

  1. Bake for 20–25 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbly and golden.

Step 4: Garnish and Serve

  • Garnish with fresh basil or parsley and serve hot.

Notes

  • Add a splash of balsamic vinegar or pesto for extra flavor.

  • Serve with pasta, rice, or crusty bread to soak up the juices.
