- 2 cups cooked chicken breast, diced or shredded
- 1 ripe pear, diced
- 1/3 cup pecans, toasted and roughly chopped
- 1/4 cup celery, finely chopped
- 2 tbsp red onion, finely minced
- 2 tbsp dried cranberries (optional)
- 2 tbsp fresh parsley, chopped
For the Creamy Yogurt Dressing:
- 3/4 cup plain Greek yogurt
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 tbsp fresh lemon juice
- Salt and black pepper, to taste
Instructions
- Step 1: Prepare the Dressing
In a medium bowl, whisk together Greek yogurt, Dijon mustard, honey, lemon juice, salt, and black pepper until smooth and creamy. - Step 2: Combine the Salad
In a large mixing bowl, add cooked chicken, diced pear, toasted pecans, celery, red onion, dried cranberries (if using), and parsley.
Pour the yogurt dressing over the mixture.
Gently fold until everything is evenly coated. - Step 3: Chill & Serve
Refrigerate for at least 20–30 minutes to allow flavors to meld.
Serve chilled in lettuce cups, on whole-grain bread, in wraps, or over mixed greens.
