Ingredients
For the Cake:

For the Cherry Mousse:

2 cups fresh or frozen cherries, pureed

For the Ganache:

Instructions

Preheat oven to 350°F (175°C) and grease a 9-inch cake pan.

In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.

Add buttermilk, vegetable oil, eggs, and vanilla. Mix until well combined.

Carefully stir in boiling water until batter is smooth.

Pour into prepared pan and bake for 30–35 minutes. Let cool completely.

For the mousse, whip the heavy cream to soft peaks. Fold in the cherry puree and bloomed gelatin until smooth.

Spread cherry mousse over the cooled cake and refrigerate for 6–8 hours until set.

For ganache, combine water, cocoa powder, cream, sugar, and bloomed gelatin in a saucepan. Bring to a boil, then strain for smoothness.
