Description

This Chocolate Cherry Cake is a decadent dessert that layers a moist chocolate cake with fluffy cherry mousse and glossy chocolate ganache. It’s a perfect balance of rich cocoa and fruity cherry flavor, ideal for special occasions or indulgent treats.

Ingredients

For the Cake:

  • 1 1/2 cups all-purpose flour

  • 1 cup unsweetened cocoa powder

  • 1 1/2 cups granulated sugar

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup buttermilk

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup boiling water

For the Cherry Mousse:

  • 2 cups fresh or frozen cherries, pureed

  • 1 tablespoon gelatin, bloomed

  • 1 cup heavy whipping cream

For the Ganache:

  • 1 cup water

  • 1/2 cup cocoa powder

  • 1/2 cup heavy cream

  • 1/2 cup granulated sugar

  • 1 tablespoon gelatin, bloomed

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9-inch cake pan.

  • In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.

  • Add buttermilk, vegetable oil, eggs, and vanilla. Mix until well combined.

  • Carefully stir in boiling water until batter is smooth.

  • Pour into prepared pan and bake for 30–35 minutes. Let cool completely.

  • For the mousse, whip the heavy cream to soft peaks. Fold in the cherry puree and bloomed gelatin until smooth.

  • Spread cherry mousse over the cooled cake and refrigerate for 6–8 hours until set.

  • For ganache, combine water, cocoa powder, cream, sugar, and bloomed gelatin in a saucepan. Bring to a boil, then strain for smoothness.

  • Pour ganache over chilled mousse layer and refrigerate until set.

Notes

  • For best results, use high-quality cocoa and ripe cherries.

  • Chill mousse thoroughly before adding ganache to keep layers clean.

  • This cake slices best when fully set and chilled overnight.
