Description

This Chocolate Cherry Swiss Roll is a decadent dessert featuring a fluffy chocolate sponge, luscious whipped cream, and sweet cherries. A Black Forest-inspired treat that’s perfect for holidays, birthdays, or any time you want an elegant showstopper on your dessert table.


Ingredients

For the Chocolate Sponge Cake:

  • 4 large eggs

  • 3/4 cup granulated sugar

  • 1 tsp vanilla extract

  • 1/4 cup unsweetened cocoa powder

For the Whipped Cream Filling:

  • 1 1/2 cups heavy whipping cream

  • 1/4 cup powdered sugar

  • 1 tsp vanilla extract

For the Filling & Decoration:

  • 1 cup cherry pie filling or fresh pitted cherries

  • 2 tbsp cherry liqueur (optional)

  • 1/2 cup chocolate shavings or curls

  • Fresh cherries for decoration


Instructions

  • Prepare the Chocolate Sponge Cake:
    Preheat oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment.
    Beat eggs and sugar with an electric mixer on high speed for 5 minutes, until thick and pale.
    Fold in vanilla and sifted cocoa powder gently. Spread evenly in the pan.
    Bake for 10–12 minutes, or until it springs back when touched.

  • Roll the Cake:
    While still warm, turn the cake onto a powdered sugar-dusted towel.
    Peel off parchment and roll the cake with the towel. Cool completely.

  • Make the Whipped Cream Filling:
    In a chilled bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form.

  • Assemble the Roll:
    Unroll the cake and spread with whipped cream, leaving a 1/2-inch border.
    Add cherry pie filling or fresh cherries; drizzle with cherry liqueur if using.
    Roll it back up, seam side down.

  • Decorate the Roll:
    Spread remaining whipped cream over the roll.
    Top with chocolate shavings and fresh cherries for a Black Forest finish.

  • Chill and Serve:
    Refrigerate for at least 1 hour before slicing and serving.

  • Use stabilized whipped cream for longer storage.

  • Fresh cherries add a juicy bite, but cherry pie filling creates a more uniform layer.
