Instructions
-
Prepare the Chocolate Sponge Cake:
Preheat oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment.
Beat eggs and sugar with an electric mixer on high speed for 5 minutes, until thick and pale.
Fold in vanilla and sifted cocoa powder gently. Spread evenly in the pan.
Bake for 10–12 minutes, or until it springs back when touched. -
Roll the Cake:
While still warm, turn the cake onto a powdered sugar-dusted towel.
Peel off parchment and roll the cake with the towel. Cool completely. -
Make the Whipped Cream Filling:
In a chilled bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form. -
Assemble the Roll:
Unroll the cake and spread with whipped cream, leaving a 1/2-inch border.
Add cherry pie filling or fresh cherries; drizzle with cherry liqueur if using.
Roll it back up, seam side down. -
Decorate the Roll:
Spread remaining whipped cream over the roll.
Top with chocolate shavings and fresh cherries for a Black Forest finish. -
Chill and Serve:
Refrigerate for at least 1 hour before slicing and serving.
Notes
-
Use stabilized whipped cream for longer storage.
-
Fresh cherries add a juicy bite, but cherry pie filling creates a more uniform layer.
-
Cherry liqueur is optional but enhances flavor beautifully.
