For the Chicken

  • 1 1/2 lb (700 g) boneless skinless chicken breasts
  • 2 tbsp olive oil
  • Zest and juice of 2 limes
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • Salt and black pepper, to taste

For the Salad

  • 4 cups mixed greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup corn kernels (fresh or roasted)
  • 1/4 cup fresh cilantro, chopped

For the Dressing

  • 1/4 cup olive oil
  • 3 tbsp lime juice
  • 1 tbsp honey or agave
  • 1 clove garlic, minced
  • Salt and black pepper, to taste

Instructions

  1. Marinate and Cook the Chicken – In a bowl, combine olive oil, lime zest and juice, garlic, cumin, salt, and pepper. Coat chicken with the mixture and let marinate 15–20 minutes. Cook chicken in a skillet over medium heat 5–7 minutes per side until cooked through. Let rest, then slice thinly.
  2. Prepare the Dressing – Whisk together olive oil, lime juice, honey, garlic, salt, and pepper.
  3. Assemble the Salad – In a large bowl, combine mixed greens, cherry tomatoes, avocado, red onion, corn, and cilantro. Top with sliced chicken.
  4. Serve – Drizzle salad with dressing and toss gently. Serve immediately.
