For the Chicken
- 1 1/2 lb (700 g) boneless skinless chicken breasts
- 2 tbsp olive oil
- Zest and juice of 2 limes
- 2 cloves garlic, minced
- 1 tsp ground cumin
- Salt and black pepper, to taste
For the Salad
- 4 cups mixed greens (romaine, spinach, arugula)
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 red onion, thinly sliced
- 1/2 cup corn kernels (fresh or roasted)
- 1/4 cup fresh cilantro, chopped
For the Dressing
- 1/4 cup olive oil
- 3 tbsp lime juice
- 1 tbsp honey or agave
- 1 clove garlic, minced
- Salt and black pepper, to taste
Instructions
- Marinate and Cook the Chicken – In a bowl, combine olive oil, lime zest and juice, garlic, cumin, salt, and pepper. Coat chicken with the mixture and let marinate 15–20 minutes. Cook chicken in a skillet over medium heat 5–7 minutes per side until cooked through. Let rest, then slice thinly.
- Prepare the Dressing – Whisk together olive oil, lime juice, honey, garlic, salt, and pepper.
- Assemble the Salad – In a large bowl, combine mixed greens, cherry tomatoes, avocado, red onion, corn, and cilantro. Top with sliced chicken.
- Serve – Drizzle salad with dressing and toss gently. Serve immediately.
