Description

These Cinnamon Roll Blondies combine the gooey, spiced flavor of a cinnamon roll with the rich, chewy texture of a blondie. Topped with a luscious cream cheese glaze, they’re an easy and indulgent treat—no yeast required! Keywords: cinnamon roll blondies, chewy cinnamon blondies, cream cheese glaze bars, easy cinnamon dessert, gooey blondies

Ingredients

For the Blondie Base:

  • 1 cup unsalted butter, melted

  • 1 1/2 cups brown sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1/2 tsp baking powder

  • 1/2 tsp salt

For the Cinnamon Swirl:

  • 1/2 cup brown sugar

  • 1 1/2 tsp cinnamon

  • 3 tbsp melted butter

For the Cream Cheese Glaze:

  • 2 oz cream cheese, softened

  • 2 tbsp unsalted butter, softened

  • 1/2 cup powdered sugar

  • 1/2 tsp vanilla extract

  • 1-2 tbsp milk (to thin, as needed)

Instructions

  • Make the Blondie Batter:

    • Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment.

    • In a large bowl, whisk melted butter and brown sugar until combined.

    • Add eggs and vanilla; mix well.

    • Stir in flour, baking powder, and salt until just combined.

  • Add the Cinnamon Swirl:

    • In a small bowl, mix brown sugar, cinnamon, and melted butter.

    • Pour blondie batter into the pan. Drop spoonfuls of the cinnamon mix over the top and swirl with a knife.

  • Bake:

    • Bake for 25–30 minutes or until golden and set. Let cool completely.

  • Prepare the Glaze:

    • Beat cream cheese and butter until smooth.

    • Add powdered sugar, vanilla, and just enough milk to reach a drizzling consistency.

    • Drizzle over cooled blondies.

Notes

  • Let blondies cool before glazing to prevent melting.

  • Add chopped pecans or a pinch of nutmeg for variation.

  • Store in an airtight container for up to 4 days.
