Ingredients
Graham Cracker Crust:

1 1/2 cups (150g) graham cracker crumbs

1/4 cup (50g) granulated sugar

6 tbsp (85g) unsalted butter, melted

3 (8 oz / 680g) blocks cream cheese, room temperature

1 cup (200g) granulated sugar

3 large eggs

1 tsp vanilla extract

Fresh strawberries, sliced

Strawberry glaze or jam (optional)
Instructions

Prepare the Crust:
Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter until evenly moistened. Press mixture firmly into the bottom of a lined 8×8 or 9×9 baking dish. Bake for 8–10 minutes. Let cool. -
Make the Filling:
In a large bowl, beat cream cheese until smooth. Add sugar and mix until combined. Beat in eggs one at a time, then add vanilla extract. Mix until smooth and creamy. -
Bake the Cheesecake:
Pour filling over the cooled crust. Bake for 35–40 minutes, or until the center is set but still slightly jiggly. Let cool to room temperature, then refrigerate for at least 4 hours or overnight. -
Top and Slice:
Before serving, top with sliced strawberries and optional glaze. Slice into bars or squares and serve chilled.
