Ingredients

Graham Cracker Crust:

  • 1 1/2 cups (150g) graham cracker crumbs

  • 1/4 cup (50g) granulated sugar

  • 6 tbsp (85g) unsalted butter, melted

Cheesecake Filling:

  • 3 (8 oz / 680g) blocks cream cheese, room temperature

  • 1 cup (200g) granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

Topping (optional):

  • Fresh strawberries, sliced

  • Strawberry glaze or jam (optional)


Instructions

  • Prepare the Crust:
    Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter until evenly moistened. Press mixture firmly into the bottom of a lined 8×8 or 9×9 baking dish. Bake for 8–10 minutes. Let cool.

  • Make the Filling:
    In a large bowl, beat cream cheese until smooth. Add sugar and mix until combined. Beat in eggs one at a time, then add vanilla extract. Mix until smooth and creamy.

  • Bake the Cheesecake:
    Pour filling over the cooled crust. Bake for 35–40 minutes, or until the center is set but still slightly jiggly. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.

  • Top and Slice:
    Before serving, top with sliced strawberries and optional glaze. Slice into bars or squares and serve chilled.

Notes

  • For easier slicing, dip knife in warm water between cuts.

  • You can make a strawberry glaze by simmering strawberries with a little sugar and lemon juice.
