Bursting with fresh veggies, olives, and rotini, this Mediterranean pasta salad is zesty, refreshing, and perfect for picnics, potlucks, and light lunches.
Ingredients

12 oz rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1/2 cup black olives, sliced

1 bell pepper (any color), chopped

1/2 cup crumbled feta

1/4 cup fresh parsley, chopped

Dressing: 1/4 cup olive oil, 2 tbsp red wine vinegar, 1 tsp Dijon, salt & pepper
Instructions

Cook pasta according to package, then rinse under cold water and drain.

In a bowl, whisk all dressing ingredients.

Toss pasta with all chopped veggies, olives, and feta.

Pour dressing over and mix well. Chill 30+ minutes for best flavor
Notes
Can be made a day ahead. Add grilled chicken or chickpeas for extra protein.
