Description

This Cookie Dough Overload Cake is every dessert lover’s dream: three rich, moist layers of chocolate cake stacked with creamy, eggless chocolate chip cookie dough and finished with a silky chocolate ganache drip. Perfect for birthdays, parties, or indulgent celebrations—it’s nostalgia and decadence in every slice.


Ingredients

For the Chocolate Cake Layers:
• 200 g all-purpose flour
• 250 g granulated sugar
• 70 g unsweetened cocoa powder
• 1 1/2 tsp baking powder
• 1 1/2 tsp baking soda
• 1/2 tsp salt
• 2 large eggs
• 240 ml buttermilk
• 120 ml vegetable oil
• 2 tsp vanilla extract
• 240 ml hot coffee or hot water

For the Edible Cookie Dough Filling:
• 150 g unsalted butter, softened
• 150 g light brown sugar
• 60 ml milk
• 1 1/2 tsp vanilla extract
• 180 g all-purpose flour (heat-treated)
• 1/4 tsp salt
• 150 g chocolate chips

For the Chocolate Ganache:
• 200 g dark chocolate, chopped
• 200 ml heavy cream

Optional Topping:
• Chocolate truffles
• Chocolate chip clusters
• Extra ganache drizzle


Instructions

Bake the Chocolate Cake:

  1. Preheat oven to 175°C (350°F). Grease and line three 8-inch cake pans.

  2. In one bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt. In another, whisk eggs, buttermilk, oil, and vanilla.

  3. Mix wet and dry ingredients, then stir in hot coffee. Divide batter into pans and bake for 25–28 minutes. Cool completely.

Make the Cookie Dough Filling:

  1. Beat butter and brown sugar until fluffy.

  2. Add milk and vanilla. Mix in heat-treated flour and salt. Fold in chocolate chips. Chill 15–20 minutes for easier layering.

Prepare the Ganache:

  1. Heat cream until simmering. Pour over chopped chocolate. Let sit 2 minutes, then stir until smooth and glossy. Cool slightly.

Assemble the Cake:

  1. Layer chocolate cake with cookie dough filling between each tier.

  2. Chill to set structure.

Finish with Ganache & Toppings:

  1. Pour warm ganache over top, letting it drip.

  2. Decorate with chocolate truffles, mini cookies, or extra chips.
