  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1/2 red onion, sliced
  • 1 tbsp olive oil
  • Salt and pepper, to taste

For the Whipped Feta:

  • 1/2 cup crumbled feta cheese
  • 2 tbsp Greek yogurt
  • 1 tsp lemon juice
  • 1 tbsp olive oil
  • Pinch of black pepper

Instructions

  1. Marinate the Chicken: In a bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, smoked paprika, salt, and pepper. Add chicken and coat well. Marinate for 15–20 minutes.
  2. Cook the Couscous: Bring chicken broth (or water) and olive oil to a boil. Stir in couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
  3. Grill the Chicken: Heat a grill pan or skillet over medium-high heat. Cook chicken 5–7 minutes per side until fully cooked. Let rest for a few minutes, then slice.
  4. Grill the Vegetables: Toss zucchini, bell peppers, and onion with olive oil, salt, and pepper. Grill or sauté until tender and slightly charred, about 6–8 minutes.
  5. Prepare the Whipped Feta: Blend feta, Greek yogurt, lemon juice, olive oil, and black pepper until smooth and creamy.
