For the Chicken:

For the Couscous:
- 1 cup couscous
- 1 1/4 cups chicken broth or water
- 1 tbsp olive oil
- Salt, to taste
For the Grilled Vegetables:
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 red onion, sliced
- 1 tbsp olive oil
- Salt and pepper, to taste
For the Whipped Feta:
- 1/2 cup crumbled feta cheese
- 2 tbsp Greek yogurt
- 1 tsp lemon juice
- 1 tbsp olive oil
- Pinch of black pepper
Instructions
- Marinate the Chicken: In a bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, smoked paprika, salt, and pepper. Add chicken and coat well. Marinate for 15–20 minutes.
- Cook the Couscous: Bring chicken broth (or water) and olive oil to a boil. Stir in couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
- Grill the Chicken: Heat a grill pan or skillet over medium-high heat. Cook chicken 5–7 minutes per side until fully cooked. Let rest for a few minutes, then slice.
- Grill the Vegetables: Toss zucchini, bell peppers, and onion with olive oil, salt, and pepper. Grill or sauté until tender and slightly charred, about 6–8 minutes.
- Prepare the Whipped Feta: Blend feta, Greek yogurt, lemon juice, olive oil, and black pepper until smooth and creamy.
- Assemble the Bowls: Divide couscous among serving bowls. Top with sliced balsamic chicken and grilled vegetables. Add a generous spoonful of whipped feta.
- Serve: Garnish with fresh herbs like parsley if desired and serve warm.
