Ingredients

4 boneless, skinless chicken breasts

1 cup fresh or frozen cranberries

1/4 cup balsamic vinegar

2 tbsp honey or maple syrup

2 garlic cloves, minced

Salt & pepper, to taste

Fresh thyme or rosemary, for garnish
Instructions

Preheat oven to 200°C (400°F).

Season chicken breasts with salt and pepper.

In an oven-safe skillet, heat olive oil over medium-high heat. Sear chicken 2–3 minutes per side until golden.

In a bowl, mix cranberries, balsamic vinegar, honey, and garlic.

Pour cranberry mixture over the seared chicken.

Transfer skillet to the oven and bake for 15–20 minutes, until chicken is cooked through and cranberries are soft.
