Description

This Cranberry Balsamic Chicken Breasts recipe is a flavorful and elegant meal perfect for weeknights or festive dinners. Juicy seared chicken is oven-baked in a tangy cranberry balsamic sauce, making it a delicious combination of sweet, savory, and tart.


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 cup fresh or frozen cranberries

  • 1/4 cup balsamic vinegar

  • 2 tbsp honey or maple syrup

  • 2 garlic cloves, minced

  • 1 tbsp olive oil

  • Salt & pepper, to taste

  • Fresh thyme or rosemary, for garnish


Instructions

  • Preheat oven to 200°C (400°F).

  • Season chicken breasts with salt and pepper.

  • In an oven-safe skillet, heat olive oil over medium-high heat. Sear chicken 2–3 minutes per side until golden.

  • In a bowl, mix cranberries, balsamic vinegar, honey, and garlic.

  • Pour cranberry mixture over the seared chicken.

  • Transfer skillet to the oven and bake for 15–20 minutes, until chicken is cooked through and cranberries are soft.

  • Spoon sauce over the chicken and garnish with fresh herbs. Serve warm.

Notes

  • Use maple syrup for a deeper, earthy sweetness.

  • Great served with wild rice or mashed sweet potatoes.

  • Double the cranberry sauce for extra drizzle!
