Description

This Cranberry Pistachio Cheesecake is a festive dessert with a creamy cheesecake filling, crunchy pistachios, and tart cranberries, perfect for the holidays!


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped pistachios
  • 1/2 cup dried cranberries
  • 1/2 cup heavy cream

 

  • Fresh cranberries and caramelized almonds for garnish

Instructions

  • Preheat oven to 325°F (163°C).
  • Mix graham cracker crumbs with butter and press into a springform pan.
  • Beat cream cheese and sugar until smooth.
  • Add eggs one at a time, then mix in vanilla.
  • Stir in pistachios and cranberries.
  • Pour mixture over crust and bake for 45 minutes.
  • Let cool, then refrigerate for 4 hours.

 

  • Garnish with fresh cranberries and caramelized almonds.
