Ingredients
6 cups potatoes, peeled and diced
• 1 cup cheddar cheese, shredded
• 3/4 cup mayonnaise
• 1 cup bacon, cooked and crumbled
• 3 teaspoons garlic, minced
• 1/2 cup onion, chopped
• Salt and pepper, to taste
Instructions

Prep and Boil Potatoes:
Preheat oven to 350°F (175°C).
Boil diced potatoes in salted water for about 15 minutes, or until fork-tender. Drain and return to the pot. -
Mash and Mix:
Mash the potatoes until mostly smooth.
Stir in mayonnaise, cheddar cheese, garlic, and chopped onion until well combined. -
Add Bacon and Season:
Mix in crumbled bacon. Season with salt and pepper to taste. -
Bake:
Transfer mixture into a greased baking dish.
Smooth the top with a spatula and bake for 20–25 minutes, or until the top is golden and heated through. -
Garnish and Serve:
Garnish with extra crumbled bacon and a sprinkle of cheddar cheese before serving hot.
Notes
Substitute sour cream for half the mayo for tangier flavor.
