Description

This Creamy Chicken Stroganoff with Bacon & Mushroom is a rich and comforting dish featuring tender chicken strips, crispy bacon, and sautéed mushrooms in a velvety cream sauce. Served over egg noodles or rice, it’s the perfect weeknight dinner packed with savory flavor.

Ingredients

  • 2 chicken breasts, sliced into strips

  • 4 slices bacon, chopped

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup mushrooms, sliced

  • 1 tbsp flour

  • 1 cup chicken broth

  • 1 cup heavy cream

  • 1 tbsp Dijon mustard

  • 1 tsp paprika

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • Fresh parsley, for garnish (optional)

  • Cooked egg noodles or rice, for serving

Instructions

  • In a large skillet over medium heat, cook chopped bacon until crispy. Remove bacon and set aside, leaving bacon fat in the skillet.

  • Season chicken strips with salt, pepper, and paprika. Add olive oil to the skillet and sauté chicken until browned, about 5-6 minutes. Remove chicken and set aside.

  • Add onion, garlic, and mushrooms to the skillet. Cook for 4-5 minutes until softened.

  • Sprinkle flour over the mixture, stir to combine, and cook for 1-2 minutes to form a roux.

  • Gradually pour in chicken broth, stirring constantly to avoid lumps. Simmer 3-4 minutes until sauce thickens.

  • Lower heat and stir in heavy cream and Dijon mustard. Return chicken to the skillet and cook 5 more minutes until chicken is cooked through.

  • Stir in crispy bacon. Adjust seasoning with salt and pepper.

  • Serve over egg noodles or rice, garnished with parsley if desired.

Notes

  • For extra depth, add a splash of white wine before adding the broth.

  • Swap chicken for pork or turkey strips if preferred.

  • Great for meal prep — refrigerate leftovers for up to 3 days.
