2 chicken breasts, sliced into strips

4 slices bacon, chopped

1 tbsp Dijon mustard

Instructions

In a large skillet over medium heat, cook chopped bacon until crispy. Remove bacon and set aside, leaving bacon fat in the skillet.

Season chicken strips with salt, pepper, and paprika. Add olive oil to the skillet and sauté chicken until browned, about 5-6 minutes. Remove chicken and set aside.

Add onion, garlic, and mushrooms to the skillet. Cook for 4-5 minutes until softened.

Sprinkle flour over the mixture, stir to combine, and cook for 1-2 minutes to form a roux.

Gradually pour in chicken broth, stirring constantly to avoid lumps. Simmer 3-4 minutes until sauce thickens.

Lower heat and stir in heavy cream and Dijon mustard. Return chicken to the skillet and cook 5 more minutes until chicken is cooked through.
