For the Chicken
- 500 g chicken breast or thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 tablespoons honey
- 4 cloves garlic, minced
- 2 tablespoons soy sauce (halal)

- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
For the Orzo
- 1 1/2 cups orzo pasta
- 2 cups chicken broth (halal)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1 tablespoon lemon juice
For the Creamy Feta Sauce
- 150 g feta cheese
- 1/2 cup Greek yogurt
- 1 tablespoon olive oil
- 1 clove garlic
- 1 tablespoon lemon juice
- 1/2 teaspoon black pepper
For the Roasted Cranberries
- 1 cup cranberries (fresh or frozen)
- 1 tablespoon honey
- 1 teaspoon olive oil
- Pinch of salt
Optional Garnish
- Fresh parsley
- Cracked black pepper
Instructions
- Preheat oven to 200°C (400°F). Toss cranberries with honey, olive oil, and a pinch of salt. Roast for 10–12 minutes until slightly burst and caramelized.
- Cook orzo in chicken broth according to package instructions until tender. Drain if needed and mix with olive oil, lemon juice, and salt.
- In a pan, heat olive oil over medium-high heat. Add chicken, season with paprika, salt, and black pepper, and cook until golden and fully cooked.
- Add garlic, honey, and soy sauce to the chicken. Stir and cook for 2–3 minutes until glossy and sticky.
- Blend feta cheese, Greek yogurt, olive oil, garlic, lemon juice, and black pepper until smooth and creamy.
- Assemble bowls: start with orzo, add honey garlic chicken, and top with roasted cranberries.
- Drizzle generously with creamy feta sauce.
- Garnish with parsley and black pepper. Serve warm.
