For the Chicken

  • 500 g chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (halal)
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

For the Orzo

  • 1 1/2 cups orzo pasta
  • 2 cups chicken broth (halal)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice

For the Creamy Feta Sauce

  • 150 g feta cheese
  • 1/2 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 1/2 teaspoon black pepper

For the Roasted Cranberries

  • 1 cup cranberries (fresh or frozen)
  • 1 tablespoon honey
  • 1 teaspoon olive oil
  • Pinch of salt

Optional Garnish

  • Fresh parsley
  • Cracked black pepper

Instructions

  1. Preheat oven to 200°C (400°F). Toss cranberries with honey, olive oil, and a pinch of salt. Roast for 10–12 minutes until slightly burst and caramelized.
  2. Cook orzo in chicken broth according to package instructions until tender. Drain if needed and mix with olive oil, lemon juice, and salt.
  3. In a pan, heat olive oil over medium-high heat. Add chicken, season with paprika, salt, and black pepper, and cook until golden and fully cooked.
  4. Add garlic, honey, and soy sauce to the chicken. Stir and cook for 2–3 minutes until glossy and sticky.
  5. Blend feta cheese, Greek yogurt, olive oil, garlic, lemon juice, and black pepper until smooth and creamy.
  6. Assemble bowls: start with orzo, add honey garlic chicken, and top with roasted cranberries.
  7. Drizzle generously with creamy feta sauce.
  8. Garnish with parsley and black pepper. Serve warm.
