For the Shrimp
- 1 lb (450 g) shrimp, peeled and deveined
- 2 tbsp butter
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Pasta
- 8 oz (225 g) pasta (linguine or fettuccine)
For the Sauce
- 1 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 1/4 cup pasta water
- 1 tbsp lemon juice
Garnish
- 2 tbsp fresh parsley, chopped
- Extra parmesan for serving
Instructions
- Cook the Pasta: Cook pasta according to package instructions. Reserve ¼ cup pasta water, then drain.
- Sear the Shrimp: Heat butter and olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds. Add shrimp, salt, and black pepper, and cook for 1–2 minutes per side until pink. Remove and set aside.
- Make the Sauce: Pour in heavy cream and simmer for 2–3 minutes. Stir in parmesan cheese and pasta water until smooth and creamy.
- Combine and Garnish: Add cooked pasta to the sauce and toss to coat. Return shrimp to the skillet and mix gently. Finish with lemon juice, fresh parsley, and extra parmesan. Serve warm.
