Ingredients

250 g (9 oz) spaghetti

200 g (7 oz) peeled shrimp

100 g (3.5 oz) chorizo (spicy or mild, to taste)

1 small can (about 200 g / 7 oz) crushed tomatoes

1 shallot or small onion, finely chopped

2 garlic cloves, minced

200 ml (about 3/4 cup) heavy cream or crème fraîche

Olive oil

Salt, pepper

Paprika (optional)

Herbes de Provence or dried basil

Grated Parmesan cheese (optional)
Instructions

Cook the spaghetti in a large pot of salted water according to package instructions. Drain, reserving one ladle of pasta water.

Prepare the chorizo by slicing it into rounds. Sauté in a dry pan for 3–4 minutes until golden. Remove and set aside.

Sauté the shrimp in the same pan with a drizzle of olive oil, along with the shallot and garlic. Cook shrimp 2–3 minutes per side. Season lightly.

Add the tomatoes and let simmer for 2–3 minutes. Stir in the cream and return the chorizo to the pan. Season with paprika, herbs, salt, and pepper. Simmer gently for 5 minutes.

Combine with the pasta, mixing thoroughly. Add a bit of reserved pasta water to loosen the sauce if needed.

Serve hot, topped with black pepper and Parmesan
