Description

These Crispy Broccoli & Cheese Nuggets are golden, crunchy bites of veggie-packed goodness with a melty, cheesy center. A perfect meatless snack or side dish that’s kid-friendly, freezer-friendly, and irresistibly delicious.


Ingredients

  • 2 cups finely chopped broccoli (steamed or blanched)

  • 1 cup shredded cheddar cheese

  • 1/4 cup grated Parmesan cheese

  • 1/2 cup breadcrumbs (plus more for coating)

  • 1/4 cup finely chopped onion (optional)

  • 1 egg

  • 1/2 teaspoon garlic powder

  • Salt and black pepper to taste

  • Olive oil spray or a little oil for baking/frying


Instructions

Step 1: Prepare the Mixture

  1. Chop broccoli into very fine pieces (or pulse in a food processor).

  2. In a bowl, mix broccoli, cheddar, Parmesan, breadcrumbs, onion, egg, garlic powder, salt, and pepper.

  3. Chill the mixture for 15–20 minutes to firm up.

Step 2: Form the Nuggets

  1. Scoop about 1 tablespoon of the mixture and shape into small nuggets or patties.

  2. Coat lightly in additional breadcrumbs for extra crispiness.

Step 3: Cook

  • Baking: Preheat oven to 400°F (200°C), place nuggets on a lined baking sheet, spray with olive oil, and bake 18–20 minutes, flipping halfway.

  • Air Frying: Cook at 375°F (190°C) for 10–12 minutes, shaking halfway.

  • Pan Frying: Fry in a skillet with a bit of oil until golden on both sides.

Step 4: Serve

  • Serve warm with ketchup, ranch, or your favorite dip.

Notes

  • Use frozen broccoli (thawed and drained) for convenience.

  • Add cooked quinoa or mashed potato for variety.

  • These freeze well—bake from frozen with extra cook time.
