Description

This Crispy Chicken Sandwich is the ultimate homemade comfort food! Juicy chicken breast coated in a perfectly seasoned, golden, crunchy crust, tucked into a soft bun with fresh toppings and your favorite sauce. It’s an easy, satisfying sandwich that beats takeout every time!

Ingredients

  • 2 boneless, skinless chicken breasts (sliced in half horizontally for thinner cutlets)

  • 1 cup buttermilk (or regular milk with 1 tbsp lemon juice)

  • 1 cup all-purpose flour

  • 1 cup panko breadcrumbs

  • 1/2 cup cornstarch

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • Vegetable oil, for frying

  • 4 sandwich buns

  • Lettuce leaves

  • Sliced tomato

  • Pickles (optional)

  • Mayonnaise or spicy aioli (optional)

Instructions

  • Marinate the chicken: Place chicken cutlets in a bowl with buttermilk. Let soak for at least 20 minutes (or overnight for extra tenderness).

  • Prepare the coating: In a shallow bowl, combine flour, cornstarch, panko, garlic powder, paprika, salt, and pepper.

  • Heat oil: Add enough vegetable oil to a skillet to cover the bottom generously. Heat over medium-high heat until shimmering (350°F / 175°C).

  • Coat and fry: Remove chicken from buttermilk, allowing excess to drip off. Dredge in the flour mixture, pressing to adhere. Fry 3–4 minutes per side until golden brown and cooked through. Transfer to paper towels to drain.

  • Assemble the sandwich: Place crispy chicken on buns. Add lettuce, tomato, pickles, and spread mayonnaise or aioli on the bun. Serve hot!

Notes

  • For extra heat, add cayenne pepper to the flour mix or drizzle with hot sauce.

  • Toast the buns lightly for added texture.

  • Works great with brioche or potato rolls.
