Ingredients

  • 1.5 lbs bone-in, skin-on chicken thighs (or chicken breasts, cut into 1-inch pieces)

  • 2 lbs small red potatoes, quartered

  • 1/4 cup olive oil

  • 4 cloves garlic, minced

  • 1/2 cup grated Parmesan cheese

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • Salt and pepper to taste


Instructions

  • Preheat oven to 400°F (200°C).

  • Wash and quarter the potatoes. Mince the garlic.
