Ingredients
Pork Chops:

4 bone-in pork chops (1/2 inch thick)

1 cup all-purpose flour

1 tsp salt

1/2 tsp black pepper

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 cup buttermilk (or regular milk)

1 large egg

Vegetable oil, for frying
Gravy (optional):

2 tbsp pan drippings or butter

2 tbsp all-purpose flour

1 1/2 cups milk

Salt and pepper, to taste

Prep Coating: In one bowl, whisk egg and buttermilk. In another, mix flour with salt, pepper, paprika, garlic powder, and onion powder.

Dredge Pork Chops: Dip each pork chop into the egg mixture, then dredge in seasoned flour, pressing to adhere.

Fry: Heat 1/2 inch of oil in a skillet over medium heat. Fry pork chops 4–5 minutes per side, or until golden brown and internal temp reaches 145°F (63°C). Transfer to a paper towel-lined plate.

Make Gravy: Pour off most of the oil, keeping 2 tbsp in pan. Stir in 2 tbsp flour and cook 1 minute. Gradually whisk in milk. Cook until thickened, about 3–5 minutes. Season with salt and pepper.
