- 4 medium Yukon Gold or Russet potatoes
- 3 tbsp butter, melted
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1 tsp fresh thyme or rosemary (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a muffin tin or use parchment strips for easy removal.
- Thinly slice potatoes using a mandoline and pat them dry with paper towels to remove excess moisture.
- In a large bowl, toss the potato slices with melted butter, olive oil, salt, pepper, garlic powder, and herbs if using.
- Stack the slices neatly into each muffin tin well, pressing down lightly to compact them.
- Bake for 40–45 minutes until the edges are golden brown and crispy.
- Let cool slightly before removing from the tin. Serve warm.

- Pat potatoes dry to promote crispiness.
- Spoon leftover butter/oil on top mid-bake for added richness.
