  • 3 cups green cabbage, thinly shredded
  • 1 cup red cabbage, thinly shredded
  • 1 cup shredded carrots
  • 1/2 red bell pepper, thinly sliced
  • 3 green onions, sliced
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp toasted sesame seeds

For the Sesame Ginger Dressing:

  • 3 tbsp rice vinegar
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp freshly grated ginger
  • 1 small clove garlic, minced
  • 2 tbsp olive oil

Instructions

  1. Cook the Chicken

    Season chicken with salt, pepper, garlic powder, and ground ginger. Heat olive oil in a skillet over medium heat. Cook chicken for 5–6 minutes per side until golden and fully cooked (internal temp 165°F / 74°C). Remove from heat and let rest 5 minutes, then slice thinly.

  2. Prepare the Slaw

    In a large bowl, combine green cabbage, red cabbage, carrots, bell pepper, green onions, and cilantro. Toss lightly to mix.

  3. Make the Dressing

    In a small bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, grated ginger, garlic, and olive oil until well combined.

  4. Assemble

    Add sliced chicken to the slaw mixture. Pour dressing over and toss until evenly coated. Sprinkle toasted sesame seeds on top.
