For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 1/2 tsp garlic powder
- 1/2 tsp ground ginger
For the Crunchy Slaw:
- 3 cups green cabbage, thinly shredded
- 1 cup red cabbage, thinly shredded
- 1 cup shredded carrots
- 1/2 red bell pepper, thinly sliced
- 3 green onions, sliced
- 2 tbsp fresh cilantro, chopped
- 2 tbsp toasted sesame seeds
For the Sesame Ginger Dressing:
- 3 tbsp rice vinegar
- 2 tbsp low-sodium soy sauce
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tsp freshly grated ginger
- 1 small clove garlic, minced
- 2 tbsp olive oil
Instructions
- Cook the Chicken – Season chicken with salt, pepper, garlic powder, and ground ginger. Heat olive oil in a skillet over medium heat. Cook chicken for 5–6 minutes per side until golden and fully cooked (internal temp 165°F / 74°C). Remove from heat and let rest 5 minutes, then slice thinly.
- Prepare the Slaw – In a large bowl, combine green cabbage, red cabbage, carrots, bell pepper, green onions, and cilantro. Toss lightly to mix.
- Make the Dressing – In a small bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, grated ginger, garlic, and olive oil until well combined.
- Assemble – Add sliced chicken to the slaw mixture. Pour dressing over and toss until evenly coated. Sprinkle toasted sesame seeds on top.
