For the Chicken Cutlets
- 4 boneless skinless chicken breasts, pounded to 1/2-inch thickness
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1/2 tsp crushed red pepper flakes (optional)
For the Tomato & Burrata Topping
- 1 cup cherry tomatoes, halved
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and black pepper, to taste
- 2 balls burrata cheese
- 1/4 cup fresh basil leaves, chopped
Instructions
- Prepare the Chicken – Season chicken cutlets with salt, pepper, oregano, and optional red pepper flakes. Heat olive oil in a large skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden and fully cooked. Remove and keep warm.
- Prepare the Tomato Topping – In a small bowl, toss cherry tomatoes with olive oil, balsamic vinegar, salt, and pepper.
- Assemble the Cutlets – Place cooked chicken cutlets on a serving platter. Top with the tomato mixture. Tear burrata over the top so it’s creamy and slightly melted.
- Garnish & Serve – Sprinkle chopped fresh basil over the chicken and tomatoes. Serve immediately with crusty bread or a side salad.
